Vegetable Broth from CIBO

Ingredients:
2 liters water
2 stalks celery
1 whole onion, peeled
1 piece carrot
bay leaf
8 to 10 pieces peppercorns

Optional:
leeks
mushrooms
garlic
bouquet garni

Procedure:
Put all ingredients in a large pot, and bring to a boil.
Reduce heat and simmer for at least an hour.
See that color should be like a nicely tinted consomme.
To have ready in your itchen at all times, keep frozen.
