Wheatgrass Chronicles Part 10

while i was bored out of my wits the past holiday season due to monotony, i stumbled upon a New Year's Resolution video of Chester See, a half-Filipino Youtube sensation. he's a pretty good singer, he's cute, he's funny. i mentioned him in this post because he mentioned Wheatgrass in one of his resolutions where he said he's gonna be living healthy that certain year.

anyway, i have a recipe for you. Wheatgrass Muffins. i haven't tried making it yet, but it sure is edible. just kidding. i don't have any wheatgrass packets in stock so i wasn't able to try it (paging Easy Pha-max hahaha :D). nevertheless, i made dozens of muffins of different flavors using this recipe, so i guess this will work just as good.

Wheatgrass Muffins
ingredients:
2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
1 packet Easy Pha-max Wheatgrass Pure or with Honey, dissolved in 1 cup water or milk
1/2 cup vegetable oil
3/4 cup toasted oatmeal, or chocolate chips (optional)

in a large bowl, sift together all-purpose flour, sugar, baking powder and salt. in a small bowl, beat together egg, wheatgrass milk and vegetable oil. stir into the dry ingredients until well-combined then fold-in the oatmeal or chocolate chips.

fill muffin-tray until three-fourths full and bake at 200°C for 18-20 minutes. check with a toothpick to know whether the muffins are cooked. muffins are good to go if the toothpick comes out clean. cool for 5 minutes. this recipe usually yields 12 muffins.
